Grass fed beef worked with a simple Egyptian spice blend and shaped into kofta. The lean base gives a cleaner, lighter kofta than grain fed, with the flavour coming through direct.

Shaped for the grill; leaner than baladi kofta, so keep the heat medium high and don't overcook, or it firms up. A little char suits it.
Suited for: grilled kofta on skewers or in sandwiches. For a richer, more familiar kofta, the baladi version; the grass fed one is the lighter, cleaner choice. An oven shaped grass fed kofta is also available.
