A whole tenderloin from young beef, naturally lean and soft, mild in flavour, and versatile as steaks or a roast. Tender from the cut and the young animal, with little marbling.

Cook it simply and don't overdo it, sear or roast and pull it early, then rest. Even along its length, so it portions into neat fillet steaks.
