Uniform veal cubes, fine grained and soft, the most delicate of the cubes. Mild enough to take on spices without being overpowered, tender enough to stay juicy rather than chewy.

Veal, handled through our professionally managed cold chain, so it reaches you clean, sealed, and ready to cook. Keep frozen; add straight to slow cooked dishes or thaw in the fridge, not at room temperature.

They cook gently and come tender quickly, good in lighter braises and sautés as well as stews, and they soak up a sauce without toughening. Don't cook them hard.

Suited for: delicate stews, tagines, and light sautés. For a firmer, leaner cube, the grass fed cubes; for a fuller, familiar one, the baladi cubes; for a mild everyday cube, the young beef cubes. The veal cube is the most delicate.
