Australian mutton, grass fed and handled through our professionally managed cold chain so it reaches you clean and sealed. Keep frozen; thaw in the fridge before cooking, not at room temperature.

Mutton has more character than lamb and rewards slower, steadier heat. Season simply, cook gently to keep it tender, and rest before carving into cutlets. For a milder, quicker cooking rack, the lamb racks are gentler. The mutton is the one for bigger flavour.
