Lean patties cook fast and can dry if overdone, so keep the heat medium high, don't press them, and pull them while still juicy.

Suited for: a lighter, cleaner burger. For a juicier, more familiar patty, the baladi burger; for a milder, tender one, the young beef burger. The grass fed burger is the lean, clean tasting choice.
