Young beef, handled through our professionally managed cold chain, so it reaches you clean, sealed, and ready to cook. Keep frozen; thaw in the fridge, then bring to room temperature before searing.

Bring it to room temperature, then sear fast on high heat and rest. Lean and quick to cook, so it dries past medium. Simple seasoning suits it.

Suited for: tender fillet steaks with a mild flavour. For a leaner, cleaner tasting fillet, the grass fed version; for real richness, the marbled tenderloins. The young beef fillet is the soft, mild one.
