Young beef, handled through our professionally managed cold chain, so it reaches you clean, sealed, and ready to cook. Keep frozen; thaw in the fridge, then bring to room temperature before searing.

Sear it fast on high heat and give it a short rest; lean, so it firms up if overcooked. Slice across the grain.

Suited for: an everyday pan or grilled steak. For a more tender steak, the young beef striploin or ribeye; for the same area with a basting fat cap, the young beef picanha.
