Thin fillet strips cook in a couple of minutes over high heat and stay tender, so add them late so they don't overcook and firm up.
Suited for: stroganoff, stir fries, and fast pan dishes. For a paler, more delicate strip, the veal stroganoff; the grass fed is the leaner, cleaner tasting one.
