Young beef, handled through our professionally managed cold chain, so it reaches you clean, sealed, and ready to cook. Keep frozen; thaw in the fridge, then bring to room temperature before searing.
Cook to medium so the fat softens and renders, which is where it develops the most flavour; pushed rarer it stays firm. Season simply.
Suited for: a tender, mild ribeye. For a fuller, more familiar flavour, the baladi ribeye; for rich marbling, the marbled ribeye. The young beef ribeye is the tender, easy middle.
